The essence of "Hakata-style kawa-yaki" is the ingredients and the care. Only neck skin is carefully selected, and through a unique method of repeated heating and resting over six days, the surface becomes crisp while the inside turns pleasantly chewy, creating an exquisite contrast. The sauce is allowed to soak into the core of the skewer over time, producing a singular flavor that releases aroma and umami with every bite. Of course it pairs perfectly with popular yakitori skewers, and fresh, juicy vegetable skewers are also an excellent match, with the scent of charcoal enhancing the natural sweetness of the ingredients.
