Hakata Kawaya is a specialty restaurant known for its "kawayaki," a type of chicken skin skewer made using a unique method. The deep flavor of the chicken skin skewers, which are fragrant on the outside and plump on the inside, is created by repeatedly grilling the skewers in a secret sauce. The restaurant has been spreading the taste of Fukuoka's original cuisine throughout Japan and has gained the support of many food connoisseurs.
